What pumpkin smells like

Pumpkin is really a dish more than a note. Cinnamon, clove and nutmeg bake it into pie; vanilla or coconut turn it into a latte; dry woods lean it toward a harvest table. Alone, pumpkin is faintly vegetal and sweet.

What to look for

  • When it falls flat. When the soft, earthy squash is missing, pumpkin is just sweet spice. Oversweetened, it smells synthetic.
  • The label trap. “White pumpkin” and “kabocha pumpkin” name particular squashes, and this page includes both. Cinnamon appears beside pumpkin on about half of these products, so the note rarely arrives on its own.
