Ginger usually reads as zesty, sharp and warm at once, a bright root spice with a citrus sparkle. It wakes a blend up rather than weighing it down.
Ginger moves between fresh and fiery. Paired with bergamot it fizzes like ginger ale; amber, vanilla and woods warm it toward gingerbread; cardamom layers it into an aromatic spice. Fresh root smells greener and sharper, while candied or dried ginger rounds out and sweetens.
